Wholemeal Banana Bread

Finding a sweet treat that you can fit into your healthy eating plan can be a challenge, but this banana bread fits the bill. A very simple recipe that will be liked by all!

Nutritional Benefits

Bananas are a great source of potassium, which can help to lower blood pressure. The wholemeal flour is a source of fibre, helping to maintain a healthy digestive system. Walnuts are a good source of omega 3 fatty acids.

Ingredients: Serves 4

  • 4 very ripe bananas, mashed
  • 3 free range eggs, beaten
  • 1 tsp vanilla extract
  • 140g wholemeal flour
  • 140g plain flour
  • 2 tsp baking powder
  • 75g muscavado sugar
  • 50g walnuts, chopped
  • large pinch salt
  • 100ml vegetable oil

How to

  • 1. Heat the oven to 160 c. Lightly grease a loaf tine and line the edges with greaseproof.
  • 2. In one bowl mix the mashed bananas with the oil, eggs and vanilla. In a second bowl mix the two flours, baking powder, sugar and salt.
  • 3. Fold the banana mix into the flours and stir to combine. Add a splash of milk if the mixture seems too stiff. Finally add the nuts and stir gently. Pour into prepared tin.
  • 4. Bake for 50-609 minutes until well risen and golden brown. Leave to cool for around 30 minutes before removing from the tin.
