Whole wheat pasta with king prawns and leeks.
When you arrive home tired and hungry, the last thing you want to do is spend hours in the kitchen cooking something which is both healthy and tasty. Fortunately this pasta recipe ticks both boxes and is ready in around 20 minutes - voila!Nutrition Buzz
Wholemeal pasta is a good source of fibre which is important for a healthy disgestive system. Leeks are a good source of iron and folate, needed to make healthy red blood cells.Serves 2
Ingredients:- 200g whole wheat pasta twirls
- 1 tbsp olive oil
- 1 tsp garlic paste
- 1 large white onion, thinly sliced
- 1 large leek, trimmed and thinly sliced
- 200g king prawns, cooked and peeled
- juice of 1/2 lemon
- 125g low fat OR very low fat soft cheese
- handful fresh parsley, chopped
- black pepper
How to:
- 1. Heat the oil in a large pan and saute the onion and garlic paste until translucent. Add the leeks and continue to cook for 5-10 minutes until softened.
- 2. Bring a large saucepan of water to the boil and cook the pasta according to pack instructions.
- 3. Once the leeks are cooked, add the soft cheese, parsley, lemon juice and black pepper to the pan and stir well to combine. Add the prawns and heat through whilst stirring gently.
- 4. Drain the pasta and add to the pan with the leeks and sauce. Stir well until the pasta is coated and the leeks evenly mixed. Serve in bowls with a drizzle of creme fraiche and parsley.
