Pesto topped salmon
This is a super easy dish and can be prepared in minutes making it a brilliant after work recipe. Salmon is an excellent source of protein and is rich in heart healthy omega 3 fatty acids.
Serves 4
- calories per serving: 311Ingredients:
- 4 salmon fillets
- 4 tbsp green pesto
- 1 lemon
- ground black pepper
- 4 heaped tbsp wholemeal breadcrumbs (about 2 slices worth)
- 1 tbsp grated Parmesan
- 200g cherry tomatoes
- 2 tsp olive oil
How to:
- 1. Preheat the oven to 200c. Lay the salmon fillets in a large baking dish and squeeze the lemon juice over each of the fillets. Season with black pepper.
- 2.Measure the pesto into a small bowl and stir in one tablespoon of the breadcrumbs. Spread the pesto equally over the four fillets.
- 3. Mix the parmesan with the remaining breadcrumbs and pile on top of the fillets.
- In a separate bowl coat the whole cherry tomatoes with the oil and then scatter around the salmon fillets in the baking dish.
- 4. Place the dish on the middle shelf of the oven and cook for around 15 minutes, until the breadcrumbs are golden brown and crispy and the salmon is cooked through. Serve with steamed broccoli.
