Spicy lamb burgers with tzatziki and pitta
Serves 4
Ingredients:
For the burgers:
1 onion, roughly chopped
2 cloves garlic
450g lean lamb mince
1 inch fresh ginger, peeled, roughly chopped
1 red chilli, seeds removed, roughly chopped
1 tsp ground cumin
pinch salt and freshly ground black pepper
For the tzatziki:
250g low fat greek style yoghurt
1 medium cucumber
2 cloves garlic, crushed
handful chopped mint
squeeze of lemon juice
freshly ground black black pepper
To serve:
2 handfuls rocket
4 large wholemeal pitta, toasted
4 plum tomatoes, sliced
How to:
- Roughly blitz the onion, garlic, chilli, ginger and cumin in a blender. Place in a bowl with the lamb mince, salt and pepper and mix well to combine. Shape into 8-10 burgers, place on a tray and refrigerate for 30 minutes.
- Meanwhile half and de-seed the cucumber and then grate into a bowl. Add the yoghurt, squeeze of lemon, mint, pepper and garlic and mix well. Leave in fridge until ready to serve.
- Brush a grill lightly with oil and grill the burgers for 5-6 minutes on each side or until cooked through.
- Whilst the burgers are cooking split and toast the pitta. Fill with a spoonful of tzatziki, a couple of sliced of tomato and some rocket before adding a burger to each. Enjoy!
