Scrambled eggs and smoked salmon on multi-seed bagels
Christmas day is the perfect excuse for a luxury breakfast! Not only are scrambled eggs and smoked salmon a perfect combination - they're full of nutrients so you can be sure you're getting a healthy start to the day.
Serves 4

Ingredients:
- 4 Multi-seed bagels
- 8 large eggs
- 150g smoked salmon trimmings
- 1 tbsp single cream (optional)
- 100ml semi skimmed milk
- ground black pepper
- 2 tsp margarine
- Handful chopped fresh chives
How To...
- 1.Chop the salmon trimmings into small pieces and set aside
- 2.Preheat the grill and slice the bagels in halves.
- 3.Break the eggs into a large bowl and whisk with the milk and ground black pepper.
- 4. Melt the margarine in a large saucepan over a gentle heat. When it starts to foam, add the eggs and turn the heat up slightly. Using a wooden spoon start to stir the eggs making sure you include the edges of the pan, back and forth, continue to stir briskly.
- 5. Whilst the eggs are cooking pop the bagels under the grill for a minute or so on each side until toasted, then place at the bottom of the grill to keep warm.
- 6. Continue to stir the eggs and when they are around 50% liquid 50% solid tip in the smoked salmon and cream (if using) - continue to stir until they you have a soft and creamy mass - then take off the heat and set aside.
- 7. As soon as the eggs are ready arrange 2 bagel halves on each plate and pile the scrambled eggs and salmon over the bagels. Sprinkle over the chives and serve immediately.
