Ramen Soup

Feeling the chill? A bowl of this delicious Ramen Soup will help beat the big freeze!

Ramen is a traditional Japanese meal of noodles served in a broth- you can use meat or vegetarian based stock and can top your bowl with anything from sliced chicken to tofu! Use different veggies to ring the changes...

Serves 2

Ingredients:

  • 500ml vegetable stock (look for low salt variety)
  • 150g ramen noodles
  • 3 handfuls chopped vegetables such as asparagus, courgette, red pepper green beans, red onions
  • 2 handful sliced portabello mushrooms
  • 2 teaspoons light soy sauce
  • 1 lime quartered
  • 1/2 teaspoon chili oil
  • 1/2 teaspoon minced fresh ginger root
  • 3 spring onions, sliced
  • Handful coriander
  • 1 chicken breast sliced, or 200g tofu, cubed, plus spray oil for frying

How To...

  • 1. Place the vegetable stock and noodles in a large saucepan, bring to a simmer and add the vegetables.
  • 2. After 3 -4 minutes (or when the noodles are cooked and vegetables tender) reduce the heat and add soy sauce, chili oil, ginger and mushrooms.
  • 3. Continue to cook, uncovered, for 10 minutes.
  • 4. Whilst the soup is simmering heat a non stick pan and spritz with oil, gently fry the tofu or chicken until browned and cooked through.
  • 5. Dish the soup into 2 large bowls and top with the chicken or tofu.
  • Garnish each bowl with spring onions and coriander. Squeeze over 2 lime quarters and- voila!
