Sausage and Lentil Casserole
Serves 4
This sausage casserole is hearty and filling - it's also equally as good for vegetarians - just use veggie sausages instead...
Ingredients
- 1 clove garlic
- 1 large leek sliced
- 1 tbsp oil
- 1 large onion, finely chopped
- 1 tin chopped tomatoes
- 1 cup puy lentils
- 1 vegetable stock cube and hot water
- 6 reduced fat Cumberland sausages or 8 vegetarian sausages
- Mixed herbs
- Black pepper
How To
1. Heat the oil and gently fry the onion and garlic until soft
2. Add the leek and cook for about 5 minutes
3. Add the lentils, stir well to coat with onion and garlic and then add tomatoes, stock and water (start with one cup - you can add more if needed)
4. Whilst the lentils are cooking grill the sausages until brown and cooked through. Allow to cool slightly and then slice.
5. When the lentils are cooked (about 20 minutes) add the sausages and stir well.
6. Add the herbs and pepper to taste and cook for another 10 minutes.
Serve with steamed broccoli, or, if you're out in the cold this Guy Fawkes, a jacket potato or crusty bread. Healthy comfort food at its best!
