Chilled tomato and wild rocket pesto soup

Buzz factor: Sacla' pesto contains Wild Italian rocket leaves, Grana Padano cheese and pine kernels pounded with aromatic fresh Italian basil.

Bonus points: A bowl of tomato soup every day can boost fertility among men, according to scientists. Researchers at Portsmouth University have discovered that lycopene, which gives tomatoes their bright red colouring, can turn sperm into super-sperm.

Preparation time: 20 minutes, plus overnight marinating

Nutritional values of Sacla pesto: Energy 1752kJ/425kcal, Protein 5.2g, Carbohydrate 3.2g (of which sugars 0.5g), Fat 43.5g (of which saturates 5.4g), Fibre 4.5g, Salt 3.6g

Ingredients:
1kg ripe tomatoes, roughly chopped
1 green pepper, deseeded and roughly chopped
1 onion, chopped
2 cloves garlic, crushed
3 tbsp Sacla’ Wild Rocket Pesto
Salt and freshly ground pepper

How to:

  • First place the tomatoes, green pepper, onion and garlic in a large bowl. Add 2 tbsp of Sacla' Wild Rocket Pesto and mix thoroughly
  • Then leave to marinate overnight, or for at least 8 hours, to let the flavours combine and deepen
  • The next day place the tomato mix into a processor and process until smooth
  • Give the soup a taste and season with salt and pepper
  • Finally serve in bowls and drizzle with the remaining pesto
