Meat feast

Serve up this tasty and exotic dish to add an extra kick to your week.

Moroccan pork fillet

Buzz factor: A fully trimmed pork serving contains up to less fat per 100g than a grilled salmon steak, an avocado pear or reduced fat cheese spread.

Bonus points: Pork provides 29 per cent of RDA of zinc, which helps the immune system and 100 per cent of thiamin which is important for energy production and digestion.

Ingredients:
4 lean pork fillets
Cumin seeds
All spice
Cinammon
Dried mint
Oil

How to:

  • Mix together 5ml (1 tsp) cumin seeds, 2.5ml (1/2 tsp) all spice, 2.5ml cinammon, 2.5ml dried mint and 15ml (tbsp) oil
  • Smear over pork fillets until evenly coated
  • Cook in a preheated oven for 25-30 minutes

Serves 4

Additional serving suggestions: On a bed of rice with a tomato and spring onion salad and a spicy tomato chutney or yoghurt dip.
