BLUEBERRY MAPLE ICED DESSERT

Serves 4

Ingredients:250g blueberries
3 tbsp maple syrup
finely grated zest and juice of a lemon
500ml low fat plain yogurt

How to:

  • Place all the ingredients in a food processor* and blend until the mixture is smooth
  • Pour the mixture into an air-tight container and freeze for a couple of hours
  • Remove from the freeze and whisk to break up any ice crystals
  • Return to the freezer for one hour and repeat the whisking process
  • Repeat stage four on one or two more occasions - the more you do it the smoother the frozen yogurt will be.

* *You can use a hand blender if you do not have a food processor
