CRACKED WHEAT AND PEPPER SALAD

Serves 2 as a light bite, lunch or filling starter. Calories per serving = 267

This tasty salad, recommended by the Vegetarian Society, is a real hit in Fitbug Towers. Whether you are vegetarian or not, we think it's well worth trying.

Ingredients:
2 tbsp sesame seeds
75g cracked wheat, also known as bulgar wheat
1 small green pepper, chopped
1 small red pepper, chopped
1 small yellow pepper, chopped
1 tbsp olive oil
2 tbsp lemon juice
1 ½ tbsp clear honey
1 handful fresh basil

How To:

  • Toast sesame seeds in a small frying pan for two minutes until lightly browned. Cover cracked wheat with boiling water for 15-20 minutes. Drain and allow to dry.
  • Place the chopped peppers into a large bowl with the cracked wheat and toasted sesame seeds.
  • Combine the olive oil, lemon juice and clear honey, pour over the salad, and mix well. This salad will benefit from chilling to allow the flavour to develop fully.
  • Half an hour before serving, tear the fresh basil leaves into smaller pieces, gently stir half into the salad, and sprinkle the remaining basil over the top.
