CHOCOLATE ORANGE POTS
Serves 4. Calories per pot = 133
These chocolate pots are really rather scrumptious! For the best results (and to get the best healthy benefits!) use the best quality chocolate you can afford.
Ingredients
1 tsp instant coffee granules
1 tbsp unsweetened cocoa powder
4 tbsp hot water
60g dark chocolate, broken into pieces
2 eggs (separated)
2 tbsp orange juice
zest of an orange
½ tbsp artificial sweetener
3 tbsp extra low fat yogurt
1 tsp icing sugar
½ teaspoon cocoa powder
How to:
- Put the coffee, cocoa, hot water and chocolate into a heatproof bowl and place over a pan of gently simmering water and stir until melted and blended.
- Remove from the heat and cool slightly.
- Add the egg yolks to the chocolate mixture, replace over the bowl of hot water and cook, stirring constantly, for 4 -5 minutes until the mixture has thickened.
- Stir in the orange juice.
- Whisk the egg whites in a grease free bowl until they are stiff.
- Add the artificial sweetener and whisk again, until the mixture looks glossy.
- Fold into the chocolate.
- Divide the small pots and chill.
- Fold the orange zest and icing sugar into the yoghurt and spoon a little on top of each dessert.
- Dust with a little cocoa powder and enjoy.
