SMOKEY BACON AND TOMATO SOUP
Serves 4. Calories per serving = 152
Ingredients
Cooking spray
2 onions, finely chopped
250g smoked bacon (fat-trimmed), diced
2 400g cans of chopped tomatoes
1 tbsp tomato puree
1 pint of vegetable stock
A few drops of Tabasco sauce
2 tbsp chopped fresh parsley
1 handful fresh basil
How to
- Spray a large pan with cooking spray and heat gently
- Add the onions and bacon and fry for 5-7min until the onions have softened and turned translucent and the bacon is slightly browned/golden. Do not allow to stick.
- Add the tinned tomatoes, tomato puree and vegetable stock simmer for 10-15mins.
- Place in a blender and whizz until smooth.
- Add the Tabasco, parsley and basil and serve piping hot.
TIP: To turn this from a light lunch or snack into a filling meal, try adding some red lentils.
