VEGETARIAN TABOULI

Serves 4. Calories per serving = 230

Ingredients:
175g cracked wheat
Juice of two lemons
2 tbsp olive oil
3 tbsp parsley
1 tbsp fresh mint
3 spring onions
3 chopped tomatoes, deseeded and deskinned

How to:

  • Soak the cracked wheat in cold water for about 20 minutes, drain, put into salad bowl and season
  • Add the lemon juice and add olive oil and leave to stand for 30 minutes
  • Add fresh parsley, mint, spring onions and chopped tomatoes.
