LENTIL PATE
Serves 6
Ingredients:
250g red lentils
4 shallots
4 cloves garlic
2 tsp curry powder
¼ tsp tumeric
¼ tsp chilli powder
½ tsp cumin seeds
300ml vegetable stock
How to:
- Heat ½ a tablespoon of olive oil in a pan
- Gently fry off the shallots, garlic and spices and garlic over a medium heat
- Add the lentils (washed) and vegetable stock
- Bring to the boil and simmer for 40 minutes until the lentils are soft (more liquid may be required)
- Remove from the heat
- Once cool, liquidise the mixture in a blender
- Put into a greased terraine tin and bake at 150C/300F for 30 minutes.
