LENTIL PATE

Serves 6

Ingredients:
250g red lentils
4 shallots
4 cloves garlic
2 tsp curry powder
¼ tsp tumeric
¼ tsp chilli powder
½ tsp cumin seeds
300ml vegetable stock

How to:

  • Heat ½ a tablespoon of olive oil in a pan
  • Gently fry off the shallots, garlic and spices and garlic over a medium heat
  • Add the lentils (washed) and vegetable stock
  • Bring to the boil and simmer for 40 minutes until the lentils are soft (more liquid may be required)
  • Remove from the heat
  • Once cool, liquidise the mixture in a blender
  • Put into a greased terraine tin and bake at 150C/300F for 30 minutes.
