THAI CHICKEN CURRY

Serves 2

Ingredients:
500g chicken breasts grilled
60g onions
2 tbsp red curry paste
2 red peppers
400ml tin low fat coconut milk
25g mushrooms
tbsp brown sugar
125mls stock
1 tbsp fresh coriander
lime juice

How to:

  • Fry off the onions until soft then add the chicken, peppers, mushrooms and curry paste
  • Cook for 3 minutes on medium heat
  • Stir in the coconut milk and stock
  • Bring to the boil and simmer for approximately 15 minutes until the chicken and veg are cooked
  • Add the lime juice, sugar and coriander and serve with rice.
