BUTTERNUT SQUASH AND SAUSAGE CASSEROLE

Serves 4

Ingredients:
1 tbsp olive oil
454g low fat sausages (grilled)*
1 onion
2 cloves garlic
1 red pepper slices (roasted)
1 chilli
1 tsp paprika
800g roasted butternut squash (cubed)
400g tinned tomatoes
400g tinned butter beans

How to:

  • Drizzle the squash and red pepper with a little olve oil and roast in a hot oven for about 30 minutes
  • Heat a teaspoon of olive oil and fry off the onions and garlic
  • Add the spices and cook for 1 minute (you may need to add a little water to stop the mixture from sticking)
  • Add the tomates, bring to the boil and simmer for 10 minutes
  • Add the roasted vegetables and grilled sausages then simmer for a further 10 minutes
  • Season and serve with green vegetables.

*Vegetarians can substitute with vegetarian sausages
