MEXICAN BEAN PIZZA

Serves 2

Ingredients:
1 pizza base
1 cup tomato passata
1 medium red onion - finely chopped
60g tinned red kidney beans, drained and rinsed
1 large pepper thinly sliced
3 large mushrooms
220g mozarella
1 large ripe advocado sliced

How to:

  • Spread the pizza base with the passata
  • Add the beans and vegetables
  • Cover with mozarella
  • Cook under a medium grill for 30 minutes until base is crisp
  • Place slices of avocado on top of the pizza and serve.
