SPICY PUMPKIN SOUP

Serves 4

Ingredients:
500g pumpkin chopped and roasted in olive oil
2 cloves of garlic
4 shallots
2 tsp curry powder
½ tsp ground coriander
One pinch cayenne pepper
800ml vegetable stock

How to:

  • Peel the pumpkin and roast in the oven until tender
  • Cook the shallots in a tsp of olive oil in a large pan
  • Add the garlic, spices and roasted pumpkin then cover with the stock
  • Bring to the boil and leave to simmer for 15 minutes
  • Put all ingredients into blender and blend into smooth soup
