BEAN FAJITAS
Serves 4
Ingredients:
600g red kidney beans tinned, drained and rinsed
1 x 400g tin chopped tomatoes
3 red peppers
3 courgettes
olive oil for cooking
3 onions
12 wheat tortillas
1 tsp tumeric
1 tsp chilli
1 tsp garam massala
How to:
- Heat a little oil in a frying pan and brown off the onions
- Add the peppers, courgettes and spices for a further 2 minutes or until the vegetables have softened slighly
- Add the tomatoes and kidney beans and keep stiring for a further 5 minutes
- Lower the heat and leave to simmer until the liquid evaporates
- Leave the mixture to cool slightly
- Divide into 12 tortillas - fold into 12 wraps
- Warm through in the oven on 190c/375F for 8-10 minutes
- Serve with sour cream or guacamole for a dairy free option.
