CHICKEN FAJITAS

Serves 4

Ingredients:
4 medium chicken breast fillets
400g tinned chopped tomatoes
30g pinto beans
3 red peppers
3 courgettes
olive oil for cooking
3 onions
1 tsp tumeric
1 tsp chilli
1 tsp garam massala
12 wheat tortillas

How to:

  • Heat the oil on a griddle pan over a medium heat and cook the chicken for 5 mins on each side
  • Chop the onions, add to the pan and cook until brown then add the spices and cook for a further 2 minutes
  • Add a little more olive oil to the pan to stop it sticking and add the peppers and courgettes
  • Cook until the vegetables are slightly soft
  • Add the tomatoes, pinto beans and keep stiring for further 5 minutes
  • Reduce the heat and cook until the liquid evaporates leaving a thick mixture
  • Allow the mixture to cool slightly then divide into 12 tortillas
  • Heat in the oven at 190c/375F for 8-10 minutes and serve with sour cream or guacamole.
