TOMATO AND CHILLI SAUCE

Serves 4

Ingredients:
small onion chopped
1 red chilli sliced
6 plum tomatoes deseeded without skin
2 cloves garlic
1 tsp raw sugar
½ cup water
2 tbsp coriander

How to:

  • Fry off the onions and garlic in a small pan
  • Add the remaining ingredients, except the coriander
  • Bring to the boil and simmer 10 minutes until sauce thickens
  • Season and add the coriander before serving.
