SHEPHERD'S PIE

Serves 4

Ingredients:
250g lean mince or quorn
2 onions
2 medium carrots
2 stick celery
tomato puree
stock cube
800g maris piper potatoes mashed
400g baked beans

How to:

  • Brown off the onions and celery in large pan
  • Add the mince (quorn or meat) and cook for further a 5 minutes
  • Add the tomato puree, carrots and 200ml stock and bring the mixture to the boil
  • Simmer with the lid on the pan until the carrots are tender and the liquid is absorbed
  • Add the baked beans, season and place in a large oven-proofed dish
  • Cover with the mashed potato
  • Bake in the oven on 220C 425F for 15-20 minutes or until the top is slightly golden brown.
