BAKED APPLE WITH FRUIT AND NUTS
Serves 4
Ingredients:
4 medium sized baking apples
80g mincemeat*
150ml unsweetened apple juice
40g mixed nuts
How to:
- Pre-heat the oven to 190C/375F
- De-core the apple and pierce the skin to stop them bursting while cooking
- Mix the mincemeat and nuts in a bowl and fill into the hole where the core has been removed
- Place on a greased baking tray
- Add apple juice to the hole and bake for 45 minutes
- Keep spooning juices over apple every 10 minutes throughout the cooking process to keep the fruit moist
- Serve with low fat yogurt or dairy free alternative
