SALMON TABOULI

Serves 4

Ingredients:
175g cracked wheat
Juice of two lemons
2 tbsp olive oil
3 tbsp parsley
1 tbsp fresh mint
3 spring onions
3 chopped tomatoes, deseeded and deskinned
56g smoked salmon
100g red salmon tinned in brine, drained

How to:

  • Soak the cracked wheat in cold water for about 20 minutes, drain, put into salad bowl and season
  • Add the lemon juice and add olive oil and leave to stand for 30 minutes
  • Add fresh parsley, mint, spring onions and chopped tomatoes
  • Chop the smoked salmon into small pieces and add all the salmon to the tabouli
