VEGETABLE DAHL

Serves 4

Ingredients:
250g red lentils, washed
2 tbsp olive oil
5 cloves garlic
3 green chillis, deseeded
1 tsp ground coriander
1 tsp ground cumin
½ tsp chilli powder
400g tinned chopped tomatoes
½ tsp black mustard seeds
1 tbsp chopped coriander

How to:

  • Cook the lentils in 500ml water over a medium heat for 15 minutes
  • Heat the olive oil and brown off the onions, garlic and spices
  • Add the lentils and cook for a further 5 minutes
  • Add the tomatoes and bring to boil and simmer gently for 10-15 minutes until dahl is cooked (you may need to add extra liquid)
  • Garnish with chopped coriander and low fat yogurt.
