BEAN AND AVOCADO BAKED POTATOES

Serves 4

Ingredients:
4 medium baked potatoes
300g tin red kidney beans
200g taco sauce
2 avocado

How to:

  • Bake the potato in the oven to taste Rinse the red kidney beans and place in saucepan with taco sauce
  • Warm over a medium heat stirring constantly. Do not boil
  • Once cooked, scoop out the inside of the potato and mash with advocado
  • Spoon over the bean mixture and serve with a small amount low fat cheese.
