PENNE AND BUTTER BEANS

Serves 4

Ingredients:
400g penne
1 tbsp olive oil
3 tomatoes chopped
1 red onion diced
400g tuna in brine, drained and rinsed
600g tinned butter beans (drained and rinsed)
1 tbsp chopped parsley
1 red pepper diced

How to:

  • Cook the pasta as per the instructions on the pack
  • Heat the olive oil in a saucepan and add the pasta and the remaining ingredients
  • Toss carefully until heated through
  • Serve with shavings of parmesan and garnish with parsley.
