MOROCCAN LAMB STEW

Serves 4

Ingredients:
450g lean lamb cubed
1 onion diced
4 garlic cloves
4 plum tomatoes skinned and deseeded
400g tinned tomatoes
1 tbsp harissa sauce
400g tin chick peas drained and rinsed
350g pumpkin peeled and cubed
1 tbsp fresh coriander

How to:

  • Fry off the meat in little olive oil until brown
  • Add the onions and garlic cook for a further 2 minutes
  • Add the tomatoes, tinned tomatoes and ½ a pint water and simmer for 60-90 minutes until the meat is tender
  • Add the pumpkin and chickpeas and simmer until the pumpkin is soft
  • season and garnish with chopped coriander
