RICH TOMATO SOUP

Serves 4

Ingredients:
1 onion finely chopped
500g chopped tomatoes - deskinned and deseeded
2 x 400g tin chopped tomatoes
500mls vegetable stock
2 clove garlic crushed
olive oil for cooking
1 tsp chilli powder
1/4 tsp cayenne pepper
1 tbsp fresh thyme
parmesan shavings for garnish
avocado

How to:

  • Heat a small amount olive oil in saucepan and fry off the onions until lightly brown
  • Add tomatoes and bring to the boil, then simmer for 15 mins
  • Reduce the heat and add the avocado and the rest of ingredients
  • Hand blend to your desired consistency (take care while blending)
  • Serve with parmesan shavings.
