BAKED PINEAPPLE

Serves 4

Ingredients:
600g pineapple fresh cut into chunks
2 sticks cinnamon
2 tsp brown sugar
1/2 cup water
100g vanilla low fat yogurt

How to: 

  • Preheat the oven to 220C/425F
  • Place the pineapple in an oven-proof tin with cinnamon, sugar and water
  • Cover with foil and bake for approximately 30 minutes
  • Remove the foil and bake for a further 10 minutes to brown the pineapple
  • Serve with yogurt
