LAMB KEBABS

Serves 4

Ingredients:
1 onion chopped
2 cloves garlic crushed
1 tbsp lemon juice
1 tbsp lime juice
2 tbsp white wine
1 tbsp olive oil
1 tsp ground coriander
1 tbsp garam massala
1 small red chilli deseeded and chopped
400g lamb fillets, cubed

How to: 

  • Soak barbecue skewers in hot water for 30 minutes prior to use (to prevent them from setting alight)
  • Place all ingredients except the lamb in the food processor, blend until well combined
  • Thread the cubes of lamb onto the skewers
  • Put in an oven dish and cover with the most of the marinade (reserve a little for serving)
  • Cover and place in fridge for one hour
  • Cook over the barbecue or under the grill and cook each side for approximately two minutes. Cook for 8 minutes altogether (keep turning skewers)
  • Serve hot - pour over the remaining marinate
