CHICKEN STIR-FRY

Serves 4

Ingredients:
400g chicken breast cut into strips
2 small bunches pak choi, halved
1 tbsp sesame oil
small piece ginger diced
1 clove garlic
1 small red chilli
1 onion sliced
red pepper - sliced
1/3 cup of dry sherry (optional)
2 tbsp soy sauce (light)

How to: 

  • Using a non-stick wok, heat the sesame seeds for 5 minutes until lightly toasted and then set aside.
  • Add a teaspoon of sesame oil and heat over a medium heat and add the chicken. Cook for 6-8 minutes until golden, then set aside
  • Add the remaining sesame oil and add the vegetables (ginger, garlic, chilli, onion, red pepper) and stir fry for 2 minutes
  • Return the chicken to the wok to heat through
  • Add the sherry, soya sauce and pak choi
  • Lightly toss the ingredients and serve with toasted sesame seeds.
