RATATOUILLE

Serves 4

Ingredients:
2 aubergines cubed
1 tbsp olive oil
1 onion finely chopped
1 clove garlic
1 red pepper sliced
2 courgettes sliced
tbsp sundried tomato paste
1 x 400g tin tomatoes chopped
handful fresh basil
1 tbsp flat parsley

How to: 

  • Fry off the onion and garlic in olive oil until slightly browned
  • Add the aubergines, courgette and pepper and cook for 2-3 minutes until soft
  • Add the tinned tomatoes, and tomato paste and bring to boil, simmer for further 10 minutes
  • Add the herbs - and season to taste.
