BLACKCURRANT JELLY

Serves 4. Best served with fresh fruit of your choice.

Ingredients:
225g blackcurrants
Freshly grated rind and juice of ½ a lemon
1tbsp gelatine
300ml apple juice
Seasonal fruit of your choice

How to: 

  • Put the blackcurrants and lemon juice and rind in a pan and heat gently until the blackcurrants are softened
  • Place the gelatine and half of the apple juice in a small pan and leave to soak for one minute.
  • Put on a gentle heat, stirring frequently until the gelatine has dissolved
  • Stir in the remaining apple juice and the blackcurrant mixture
  • Pour the jelly into individual ramekins or if you do not have them and chill for 3-4 hours until set.
  • Turn out onto individual plates and serve with seasonal fruit of your choice.
