WALDORF SALAD

Serves 2

Ingredients:
2 medium apples *
juice of one lemon
1 stick of celery
50g walnuts (halved)
25g raisins
2 tbsp low fat mayonnaise
2 tbsp low fat yogurt
Black pepper
150g lettuce

How to: 

  • Core and dice the apples and squeeze half of the lemon juice over the top
  • Mix in a bowl with the celery, walnuts and raisins
  • In a separate bowl mix the mayonnaise, yogurt, lemon juice and black pepper
  • Toss all the ingredients in the yogurt and mayonnaise dressing
  • Serve on a bed of lettuce

*Try using one red apple and one green one to add colour and taste
