GAZPACHO

Serves 4

Ingredients:
1kg plum tomatoes*
2 red peppers
½ cucumber
1 small red onion
2 cloves garlic
2 tablespoons olive oil
2 tablespoons wine vinegar
1 handful chopped parsley
Salt and pepper (to taste)
To garnish:
1 handful chopped basil (for garnish)
Ice cubes with frozen mint.

How to: 

  • Brush the peppers with olive oil and place under a hot grill for five minute, leave to cool and remove the skin
  • Peel and chop the tomatoes, roughly chop the cucumber, red onion and parsley and crush the garlic 
  • Place the ingredients (except the basil) in a large bowl and blend with a food processor or hand blender. 
  • Chill the mixture for at least two hours
  • Serve with a sprig of basil and ice cubes.

* Tasty plum tomatoes really do work best in the summer months, but if you can’t get your hands on them any ripe tomatoes work fine.
