MISO SOUP

Serves 4

Ingredients:
900ml water
2 tbsp miso
2 green onions, finely chopped
125g tofu cubed
2-3 fresh mushrooms, thinly sliced
˝ tsp sesame oil

How to: 

  • Heat the oil in the bottom of small pan
  • Gently fry off the onion for about a minute of until soft
  • Add 750ml water and heat through
  • Dissolve the miso in the remaining water and add to the pan
  • Bring to the boil and leave to simmer gently
  • Add mushrooms and tofu and cook for a further two to three minutes
  • Serve in small bowls.

* For an easy way to skin the fruit, place them in a bowl and pour boiling water over the top. The skins should come away with ease.
