SALMON AND BROCCOLI SPAGHETTI

Serves 2.

Ingredients:
200g broccoli
2 salmon fillets (100g approx)
300ml skimmed milk
2 tbsp cornflour
1 tbsp wholegrain mustard
1 tbsp half fat crème fraiche
150g spaghetti
Salt and Pepper to taste

How to: 

  • Season the salmon with salt and pepper
  • Turn a pan on over a high heat and when it is hot spray with cooking spray
  • Cook the salmon for 2-3 minutes on each side
  • Cut the broccoli into florets and steam
  • Using the water from the broccoli, cook the spaghetti according to the instructions on the packet.
  • In a separate pan, blend the milk with some cornflour and heat gently until it has thickened, stirring constantly.
  • Add the mustard to the sauce and stir.
  • Flake the salmon and stir into the sauce. Add the broccoli
  • Stir and heat gently until it is warmed through
  • Add the crème fraiche and salt and pepper to taste.
  • Drain the spaghetti and serve with the sauce on top.

* For an easy way to skin the fruit, place them in a bowl and pour boiling water over the top. The skins should come away with ease.
