APRICOT MERINGUE SURPRISE
Serves 2. If you prefer, try replacing the soft fruit with seasonal berries.
Ingredients:
15g brown bread crumbs
2 or 3 apricots
1 nectarine
1 peach
40g soft brown sugar
1 egg white
½ tsp ground nutmeg
How to:
- Skin and chop the fruit*
- Heat a non-stick frying pan and dry fry the bread crumbs and nutmeg until crisp
- Remove from the heat and fold through the fruit
- In a small greaseproof bowl whisk the egg white to stiff peaks
- Add half the sugar and whisk until stiff again
- Add the remaining sugar and whisk again
- With a metal spoon fold the meringue into the fruit mixture
- Divide between two small ramekins
- Bake in a pre-heated oven on gas mark 5 until golden brown
* For an easy way to skin the fruit, place them in a bowl and pour boiling water over the top. The skins should come away with ease.
