APRICOT MERINGUE SURPRISE

Serves 2. If you prefer, try replacing the soft fruit with seasonal berries.

Ingredients:
15g brown bread crumbs
2 or 3 apricots
1 nectarine
1 peach
40g soft brown sugar
1 egg white
½ tsp ground nutmeg

How to:

  • Skin and chop the fruit*
  • Heat a non-stick frying pan and dry fry the bread crumbs and nutmeg until crisp
  • Remove from the heat and fold through the fruit
  • In a small greaseproof bowl whisk the egg white to stiff peaks
  • Add half the sugar and whisk until stiff again
  • Add the remaining sugar and whisk again
  • With a metal spoon fold the meringue into the fruit mixture
  • Divide between two small ramekins
  • Bake in a pre-heated oven on gas mark 5 until golden brown

* For an easy way to skin the fruit, place them in a bowl and pour boiling water over the top. The skins should come away with ease.
