ORANGE AND CHICORY SALAD
Serves 2. Best served alone as a snack or starter, or as a side salad with grilled fish.
Ingredients:
1 orange sliced
1 head of chicory separated
60g rocket leaves
25g stoned olives
Dressing:
10ml Balsamic
15ml olive oil
Salt and pepper
1 clove crushed garlic
How to:
- Arrange chicory leaves and rocket on plate.
- Put slices of orange and olive over the top and mix.
- Mix the dressing ingredients together in a bowl and pour over top. Leave for two minutes for flavours to combine.
