CREAMY MUSHROOM PASTA

Serves 2. Serve alone or with a tasty side salad

Ingredients:
225g variety of mushrooms
15g dried porcini
1 small onion finely chopped
1 clove garlic
1 tablespoon Worcestershire sauce
Half a tub (150g) light cream cheese
Salt and pepper to taste
3 tablespoon semi-skimmed milk
150g dried pasta
Cooking spray
4 tsps Parmesan (optional)

How to:

  • Soak the porcini mushrooms in a bowl of hot water for 20-30 minutes
  • Drain and reserve the liquid.
  • Cook the pasta according to the instructions on the packet
  • Slowly fry off the onion and add all the mushrooms and garlic
  • Add the Worcestershire Sauce and cream cheese and reserved liquid and stir until it has a sauce texture (2-3 mins approx)
  • Season, then add the milk and simmer for a further 3 mins.
  • Add the chopped parsley
  • Mix with the pasta and serve with Parmesan sprinkled on the top.
