BEAN AND POTATO BAKE

Serves 4. Serve with a leafy green salad

Ingredients:
3 200g tins beans - haricot, cannelinni, berlotti (for example)
400g tin chopped tomatoes
4 large potatoes, sliced
1 diced onion
1 clove garlic
2 diced carrots
1 diced courgette
1 diced pepper
300ml vegetable stock
1-2 bay leaves
2 tsp mixed herbs
Bouquet garni
Rosemary
Salt and pepper
Cooking spray

How to:

  • Spray the pan with cooking spray and brown off the onions and garlic.
  • Add the carrots, courgette and pepper and cook until soft.
  • Add tomatoes, herbs and stock and bring to the boil.
  • Drain the beans and add to the pan, leave to simmer for 20 minutes.
  • Transfer to pot, cover with potato slices and bake for 45 minutes on Gas Mark 4 (180°C)
