TURKEY CHILLI CON CARNE

Serves 4. Best served with your choice of rice or a baked potato

Ingredients:
450 g lean turkey mince 
400g canned tomatoes
225 g red kidney beans
1 onion (diced) 
1 green pepper (diced) 
1 green chilli 
1 red chilli 
1 tbsp tomato puree 
1-2 tsp chilli powder 
2 tsp paprika 
2 tsp cumin
cooking spray 

How to:

  • Spray a frying pan with cooking spray and dry fry the mince until fully browned.
  • Remove the mince.
  • Heat the oil in the pan and add the onion, pepper and chilli, cook until soft.
  • Add the tomatoes, tomato puree, chilli powder, paprika, cumin and mince, stir thoroughly and keep over a medium heat for 20 minutes.
  • Add the kidney beans and cook for a further 5-10 minutes.
