EASY COOK MEATBALLS

Serves four. Serve with rice or pasta and spring greens

Ingredients:
Two onions
300g extra lead mince meat
2 Beef stock cubes
2 eggs
Plain flour 
Salt & pepper for seasoning

How to:

  • Slice an onion roughly and place in the bottom of a saucepan.
  • Dice the other onion and place in a bowl. Stir in the mince meat and season.  
  • Beat the eggs and add in bit by bit. 
  • Add the flour one tablespoon at a time until the meat can be held together. 
  • Form in to eight equally sized meat balls and place in the saucepan.  These can go on top of each other.  
  • Prepare the beef stock with enough water to cover the meatballs and pour in the pan. 
  • Bring to boil then cover with a lid and simmer for approx 1-1/2 hours.
