SOWING YOUR OATS VEGGIE BURGERS

Serves 2. If mint isn’t your thing,  you can use any other herbs of your choice. Brown rice can be replaced with long grain white rice, although the former is more nutritious and gives the burgers a tasty, nutty flavour. Serve in a wholemeal roll or pitta bread or on its own with salad.

Ingredients:
150ml vegetable stock
25g couscous
25g rolled oats
25g long grain brown rice
50g extra low fat cheese
1 clove of garlic
2 teaspoons Worcestershire sauce
1 handful chopped fresh mint (or one dessertspoon of dried mint)
Wholemeal flour for shaping

How to:

  • Bring a large pan of water to the boil and cook the rice as per the instructions on the pack
  • Prepare 150ml of vegetable stock using a stock cube and water from the kettle
  • Mix the oats and couscous in a large bowl and pour the stock over the top
  • Cover and leave for 20 minutes
  • Add the rice and cream cheese to the bowl and beat until smooth
  • Add the mint and season to taste with the Worcestershire sauce and salt and pepper
  • Shape into burgers and roll in the wholemeal flour.
  • Place under a hot grill and cook for 3 to 5 minutes on each size.
