BROCCOLI SOUP

Serves 4. Serve with a wholemeal bread roll

Ingredients:
900g broccoli
1 small onion
1 small carrot
1 large celery stick
1 tablespoon olive oil
900 ml vegetable stock
1 tbsp Worcestershire Sauce
1 bay leaf
4 tbsp half fat crème fraiche

How to:

  • Heat the oil in a pan and add the chopped onion, carrot and celery until softened (2 min approx)
  • Add the broccoli florets and chopped stem and stir
  • Add the stock, Worcestershire Sauce and a bay leaf
  • Bring to the boil and simmer gently for 15-29 minutes
  • Pour into a blender or food processor and blend until smooth
  • Return to the pan and stir in the crème fraiche
  • Heat gently until it is warmed through
