MEDITERRANEAN CHICKEN SALAD

Serves 2.

Ingredients:
2 skinless chicken fillets 
150g uncooked pasta 
150g rocket 
150g baby spinach leaves 
4 tsp balsamic vinegar 
12 cherry tomatoes (halved) 
50g sundried tomatoes (chopped) 
4 spring onions (sliced diagonally) 
8 black pitted olives (halved)

How to:

  • Cook the pasta according to the instructions on the packet and leave to cool
  • Grill the chicken for approximately five minutes on each side or until cooked through and cut into strips
  • Mix the pasta with the vegetables and toss until it is well mixed
  • Add the chicken and balsamic vinegar and mix again
