GINGERED PORK WITH STIR-FRIED VEGETABLES

Serves 2. For a substantial, balanced, meal serve on a bed of rice or noodles, according to your preference.

Ingredients:

2  lean pork fillets
Fat free cooking spray
1 medium onion (sliced)
1 small carrot (finely sliced)
1 courgette (sliced(
150 g snow peas (halved)
100 g bean sprouts
50 ml soy sauce
2 tbsp red wine
1 tbsp brown sugar
2 cloves of garlic - crushed
1 tbsp grated ginger

Method:

  • Pre-heat the oven to gas mark 4 (180C)
  • Combine the soy sauce, wine, sugar, garlic and ginger in a bowl, add the pork and mix well. 
  • Cover and refrigerate for at least two hours or overnight until the pork has taken up all the flavours.
  • Drain the pork and reserve the marinade.
  • Spray a non-stick pan with cooking spray, and seal for two minutes on each side. Place the pork in the oven and bake for 10 minutes)
  • Spray a large frying pan or wok with cooking spray and add the onion, carrot and courgette, stir-fry over a high heat for 2 minutes.
  • Add the reserved marinade, snow peas and bean sprouts and stir-fry for another 2 minutes.
  • Slice the pork diagonally and toss on top of the stir fry.
