Purple sprouting broccoli is back in season and full of flavour, so what better excuse do you need to try this tasty pasta dish?

Purple sprouting broccoli is a source of iron and also vitamin C, which helps the body to absorb iron. Iron is used to make healthy red blood cells. Garlic is thought to provide heart healthy benefits.Ingredients
- 150g spaghetti (choose wholemeal to increase the fibre content)
- 250g purple sprouting broccoli
- 70g soft goats cheese
- 2 cloves garlic, crushed or finely chopped.
- Half a fresh red Chilli, seeds removed and finely chopped
- Juice and grated zest of 1 lemon
- 1 tbsp olive oil
- Freshly ground black pepper
- Fresh basil to serve
How to:
- 1. Bring a large pan of water to the boil and cook the spaghetti according to pack instructions, until al dente.
- 2. Whilst the pasta is cooking, wash the broccoli, and trim off the outer leaves and woody stalks. Cut into sections. Simmer in a small amount of water for 4-5 minutes, until just tender.
- 3. In a separate pan, heat the olive oil and sweat the garlic and chili for a few minutes. Add the drained broccoli, lemon and season with black pepper.
- 4. Drain the spaghetti and add to the broccoli pan along with the goats cheese. Toss gently to mix the ingredients together well. Scatter the basil leaves over the top of the pasta and serve in hot bowls with a rocket salad.
